You absolutely must try one of the hot Cuban sandwiches which are made hot and crisp. Similar to the immigrants who birthed Ybor City, the Greeks have done the same to Tarpon Springs. Built about the same time as Ybor City, Tarpon Springs was once the home to wealthy northerners who built elaborate Victorian mansions here. The nearby waters teemed with sponges and drew sponge divers from Greece. The sponge industry flourished and the Greek immigrants made themselves at home here. These divers put down roots and the Mediterranean influence is still felt in the atmosphere, architecture and cuisine. Be sure to stroll down to the docks to watch the boats unload their sponges.
